Sandi Babič
About the producer and family:
Sandi Babič is a small, family-run olive grower and miller based in Slovenian Istria, where olive cultivation has long been part of local life and tradition. Deeply connected to the land since childhood, Sandi tends his groves with a hands-on, personal approach, seeing olive growing not simply as work but as a lifelong vocation rooted in respect for nature and heritage.
From caring for the trees to early harvesting and milling, every step is carried out with attention and care, often with the support of family and close collaborators. This direct, small-scale method allows Sandi to preserve the freshness, character, and authenticity of each harvest, producing extra virgin olive oils that express the varieties, the season, and the Istrian landscape with clarity and integrity.

About the land:
Sandi Babič’s olive groves lie in Slovenian Istria, on the gentle slopes overlooking the Adriatic Sea where the mild Mediterranean climate — tempered by sea breezes and long, sun-filled days — supports slow, even ripening of olives and the development of rich, complex flavors in the fruit. This setting, at the northern edge of the Mediterranean olive-growing zone, offers ideal conditions for early harvesting and high-quality olive oil production.
The soils here are typically well-drained and influenced by the region’s limestone and terra rossa (red earth), contributing minerality and structure to the olives. Together with the landscape’s natural rhythm and Istria’s long olive-cultivation heritage, these elements shape the character of the oils Sandi produces from native varieties such as Buža, Istarska Bjelica, and Rosinjola.
“Olive growing isn’t a job — it’s a vocation … the groves and the mill don’t belong to me. I belong to them.”
