Euforia is the personal project of Jan (Honza) Klimeš, a craftsman and fermenter based in Bezděčín near Obrataň in the Czech Republic, where forests, meadows, and quiet countryside shape everyday life. Drawn to the natural rhythms of this landscape, Jan began tapping wild birch trees and experimenting with their fresh sap, gradually transforming a simple seasonal ritual into a small-scale craft focused on purity and fermentation. His beverages are made from raw sap and naturally fermented, resulting in gently sparkling, non-alcoholic drinks that express the clean, delicate character of the trees — without added sugar, water, or artificial ingredients.
Rooted in patience and hands-on methods, Jan ferments each batch slowly in bottle through natural lactic processes, allowing time and microorganisms to guide the transformation.
