Euforia
Since 2016, Jan (Honza) Klimeš has been crafting Euforia in the quiet countryside near Bezděčín in the Czech Republic, working almost exclusively with wild birch sap tapped by hand each spring.
What began as a personal experiment with fermentation grew into a small, independent project dedicated to transforming this rare, seasonal ingredient into natural, non-alcoholic beverages that express the vitality of the forest.
Sap can only be collected for a brief window as winter fades and the trees awaken, making each harvest fleeting and precious. Jan gathers it fresh and ferments it slowly using natural lactic processes, without added sugar, water, or preservatives. His hands-on, small-batch approach allows every bottle to reflect the season, the trees, and the landscape — clean, alive, and deeply connected to its source.
